observe starlight passing close to the sun on his expedition to help form or even prove his theory.

He wrote, "If the redshift of spectral lines due to the gravitational potential should not exist, then the general theory of relativity will be untenable."

I.e. It was the first opportunity to try and falsify his completed theory.

In addition, since then, that predicted "redshift" has been observed many times. (just one thing the theory predicts).

When you say model, do you mean a scale model or a map? Sounds like you referring to the AE map.

And this is of course sort of ridiculous because of the assumption that gravity isn't at play when of course it is, just like it is when a solid exerts an upward force on another solid (with fluids we call it buoyancy)

Well I always thought Einsatein was referring to Eddington's observations when he said what I quoted.
Einstein's theory predicted for the sun that the displacement of spectral lines towards the red should amount to about two millionths of the wave-length. You couldn't calculate it in the case of other stars, because in general neither the mass nor the radius are known (without being certain that gravitational redshift is a fact etc.)

Gravitational redshift is a specific thing (more so than just redshift) and was not being measured at all with the Eddington experiment, not least because it would have been impossible

So I thought it wasn't only the curvature of light rays by the gravitational field of the sun that was observed
